Grilled Green Chile Burgers With Chipotle Mayo

Ingredients: 

Servings 4-6 burgers

1 can diced green chiles

1 package cotija cheese

Sliced avocados (optional)

For the sauce:

1 chipotle pepper in adobo sauce

1 tablespoon of adobo sauce

1/2 cup mayo

Pellets: Hickory, Mesquite

Cooking Directions:

Mix the hamburger and green chiles and form them to your desired patty size.green chile burger raw

Turn your pellet grill to smoke with the lid open for 4-5 minutes. After the grill is started, turn it to high and let it heat up. After the grill is nice and hot, throw your patties on and grill for 4-5 minutes on each side.

After your first flip place the cotija crumbles on the burger and let them melt. Cotija cheese takes a little while to melt so make sure you do it right after the flip.

While the burger is cooking make the sauce by combining the mayo, 1 chipotle pepper chopped, and the adobo sauce. The smoky heat that comes from this sauce adds another layer of flavor to the burger that is just awesome!

Once the burger is done, slather the chipotle mayo on the bun and garnish with the avocado.
