Smoked Jalapeño Popper Bacon Wrapped Pork Tenderloin

There are some foods that just go together. You’ve got your peanut butter and jelly, apples and bananas, and now jalapeno cream cheese bacon and pork tenderloin. You’ve got an amazing orchestra of flavors in every single bite! This dish can be used for a great game day recipe, family dinner, or dinner with friends. I promise your guests will be begging for this Pellet Grilled recipe!

Jalapeno Popper Bacon Wrapped Smoked Pork Tenderloin

Ingredients:

1 1/2 packages of cream cheese

3 jalapenos diced

2-3 tablespoons smoked paprika

2-3 tablespoons garlic salt

1 package of bacon

If you’re cooking with a pellet smoker use apple, hickory, or oak wood.

Directions:

You will want to start by removing the silver skin from your pork tenderloin. This will ensure you a fork tender piece of meat. Next you will want to season your tenderloin with the garlic salt and smoked paprika. Then you want to smoke your tenderloin for two hours. It’s always good to layer good flavors when you cook. I love flavorful food, and the more flavor I can add to a dish the better!

While your tenderloin is smoking you want to make the spread. Start by taking the cream cheese out of the fridge to let soften. Next, take out your jalapenos and dice, making sure you take out the seeds. Mix the diced jalapenos and cream cheese. I always like to add a little smoked paprika to the cream cheese mixture to give it a hint of smoky flavor.

While your tenderloin is finishing up smoking you will want to make your bacon weave. The bacon weave gives it an awesome look and will have your family or guest asking how you did it. If you don’t have time to make the weave just wrap the bacon around the tenderloin after you pull it off the smoker and spread the mixture on the top of the tenderloin.jpporktenderloin

Before you spread your cream cheese mixture on the tenderloin make sure it cools for 5-10 minutes. You don’t want your cream cheese to start melting yet. After it cools, spread the mixture evenly over your smoked tenderloin and the wrap in the bacon. Set your oven or pellet smoker to 375 degrees and cook for about 45 minutes or until the internal temperature reaches 145 degrees.
